It is mainly produced with Cabernet Sauvignon grapes and with Merlot and Cabernet Franc grapes, harvested exclusively by hand in the second half of September. Fermentation takes place in stainless steel tanks at a controlled temperature of 28 30 C for a duration of 12 days. After
