This juice comes from old Pinot Noir vines aged 35 years. 100% destemmed, it is then vatting at 10C for 3 to 6 days. Fermentation lasts between 12 and 18 days. Punching down is carried out twice a day. This wine is aged for 15 months in barrels, 20% of which are new.
